If you live in Okinawa, you have probably seen a small bottle filled with red chilies sitting on the table at an Okinawa soba shop.
That is koregusu (kōrēgūsu), one of Okinawa’s most familiar condiments. At its simplest, it is made by steeping shima tōgarashi, Okinawa’s small, intensely hot chili peppers, in awamori, Okinawa’s traditional distilled rice spirit.
It looks almost too simple to be interesting: chilies in alcohol.
But add just a few drops to a bowl of hot soup, and something surprising happens. The heat spreads through the dish, while the aromas of the chili and awamori rise gently with the steam.
Koregusu is often treated simply as “the spicy thing you put on Okinawa soba.” But the more you think about how it works, the more interesting this little bottle becomes.
And if you are one of those people who do not particularly like koregusu, this article is for you.
There are plenty of reasons not to like it. Some people dislike the smell of awamori. Others find it too alcoholic, too spicy, or feel that once you add too much, everything starts tasting like koregusu.
I understand that completely.
Use too much, and koregusu really can overpower a dish. The level of heat and the aroma of awamori also vary from bottle to bottle. And some bottles that have been sitting on restaurant tables for a long time—or repeatedly topped up with more awamori—can lose much of their fresh chili aroma, leaving the alcohol far more noticeable.
So there is nothing strange about saying, “I don’t like koregusu.”
Still, when a good koregusu is used in the right amount, I think it deserves a little more appreciation.
So why does something this simple work the way it does? Here we pick up where our earlier piece on pressed sake and distilled awamori left off, and follow the spirit one step further — into a bottle of chilies.
If preserving chilies were the only goal, it didn’t have to be awamori
There are plenty of ways to preserve chilies and use them in cooking.
You can pickle them in vinegar, preserve them with salt, dry and grind them into powder, or infuse their heat and aroma into oil. All of these are perfectly natural techniques found in food cultures around the world.
If all you want is heat, dried chili powder does the job. Chili oils are also found almost everywhere.
Which raises an interesting question: why did Okinawa end up putting shima tōgarashi into awamori?
The exact origins of koregusu are not entirely clear. Chili peppers are thought to have reached Okinawa by the early 18th century, while the condiment made by steeping them in awamori appears to be considerably more recent. One theory is that Okinawan emigrants to Hawaii during the Meiji period encountered local chili condiments there and brought the idea back with them. Koregusu apparently became a familiar tabletop condiment mainly after World War II.
Its history is not the main subject here, but it seems to be a much newer part of Okinawan food culture than many of us might assume.
In any case, the people who first made koregusu were probably not calculating the solubility of capsaicin or the volatility of aroma compounds. They used what was available in Okinawa. They ate it, experimented with it, and some practices simply survived.
But if we look at that combination through the lens of modern food science, there are several moments where you find yourself thinking: this is actually remarkably well designed.
A condiment needs to do two things: extract and release
When chilies are infused into something, the important question is not simply whether that liquid can dissolve the heat. There are really two jobs involved.
First, the liquid needs to extract heat and aroma from the chili. Then, once the condiment is added to food, it needs to release them again.
The compounds most responsible for chili heat are capsaicinoids, including capsaicin. These compounds dissolve very poorly in water, which means a mostly water-based liquid such as vinegar is not especially good at extracting them. Salt, of course, is not a liquid solvent at all.
Capsaicinoids, however, dissolve readily in both oil and ethanol. So if the goal is simply to extract heat from a chili, both oil and awamori work quite well. At this point, there is still nothing that makes awamori uniquely necessary.
The more interesting part is the aroma.
Cut into a fresh shima tōgarashi and you may notice green, vegetal aromas, hints of fruit, and sometimes earthy or spicy notes. Chili aroma does not come from a single compound. It is a mixture of many volatile aroma compounds with different chemical properties.
Awamori is not pure ethanol. It is a mixture of ethanol and water. That means it may be able to extract a relatively broad range of compounds — not only those that prefer an oil-like environment, but also compounds with a greater affinity for water.
Fresh shima tōgarashi itself also contains a great deal of water. Oil and water do not mix, which is one reason dried chilies are commonly used for chili oils. With awamori, however, fresh chilies can simply be dropped straight into the bottle.
Pick the chilies. Put them in a bottle. Pour in awamori. That is basically it.
It is an extremely simple technique, but when you think about it, it makes a great deal of sense.
What makes koregusu interesting is not just what it extracts
This is where koregusu becomes particularly interesting to me.
Oil is very good at extracting both heat and aroma. But some aroma compounds that dissolve readily in oil also tend to remain in that oil.
An aroma compound sitting inside a liquid cannot reach your nose. For us to perceive it as aroma, it has to leave the liquid, enter the air and eventually reach our nose.
So oil is very good at capturing certain aromas, but that same affinity can also make it hold onto them.
Something different happens when koregusu hits a dish. The alcohol concentration suddenly drops.
Ethanol helps keep many aroma compounds dissolved in the liquid. Once the awamori is diluted by the water in a soup or another dish, some of those compounds become more likely to leave the liquid and enter the air.
And when the food is hot, two more things happen at once: the temperature rises, and those few drops of koregusu are dispersed over a much larger surface area.
In other words, the conditions that had been keeping those aromas inside the bottle suddenly change.
Koregusu stores heat and aroma in awamori, then begins to release that aroma the moment it enters the food.
You notice this particularly clearly with hot dishes. Add two or three drops to Okinawa soba and you do not simply get more heat. Chili and awamori aromas rise gently through the steam.
That is why I think of koregusu not as a condiment that is already “finished” inside the bottle, but as one that really begins to work once it enters the food.
A few drops can spread through an entire dish
Awamori has another major advantage: it mixes with water.
Put a few drops into the broth of Okinawa soba and they disperse almost immediately. The same thing happens in soup or miso soup.
Oil-based chili condiments behave differently. Oil generally stays separate from water and floats at the surface. There is nothing wrong with that — chili oil has its own particular pleasures.
Koregusu simply works differently. Rather than sitting visibly on top of a dish, a very small amount works its way into the liquid and subtly changes the character of the whole thing.
Which is exactly why you do not need much. In fact, too much can ruin it.
I understand why some people dislike it
When you look at complaints about koregusu, the same things come up repeatedly: “It’s too spicy.” “I don’t like the smell of awamori.” “If you add too much, you can’t taste the food anymore.”
All of those criticisms make sense.
Shima tōgarashi can be intensely hot. Awamori has a distinctive aroma. And because koregusu mixes easily into a dish, using too much can make it dominate everything.
If you are eating something with a particularly delicate broth, choosing not to add koregusu at all can be absolutely reasonable.
The condition of the bottle matters too. Some bottles that have been sitting on restaurant tables for a long time, or that have repeatedly been topped up with fresh awamori, can lose much of their chili aroma. What remains can feel disproportionately alcoholic.
So I do not want to dismiss people who dislike koregusu by saying they simply “don’t know how to use it.”
But koregusu is not really a condiment designed to be poured generously over food. It is something that can shift the aroma and heat of a dish with only a few drops.
If you pay attention not just to the smell of the awamori itself, but to what happens to those few drops once they enter the food, you may begin to see koregusu a little differently.
The important thing with this condiment is not how much you add. It is knowing when to stop.
Aroma goes up. Heat goes in.
When koregusu is added to food, its aroma and its heat do not behave in the same way.
Aroma compounds are volatile. They leave the food, enter the air and reach your nose.
Capsaicin, on the other hand, is essentially non-volatile. It spreads through the water and fat in the food and activates a receptor in the mouth called TRPV1. That stimulation is what we perceive as chili heat.
So within the very same drop, two things are happening in different directions. The aroma rises into the air. The heat spreads through the food.
And koregusu can be added immediately before eating. If aromatic ingredients are added at the beginning of cooking, some of their most volatile compounds can be lost during heating. Koregusu allows you to keep the heat and aroma of shima tōgarashi inside the bottle until the very last moment, then release exactly as much as you want at the table.
You could think of it as a condiment that stores Okinawan chili aroma and heat, then opens them at the table.
It is a humble bottle that has sat casually on Okinawan restaurant tables for generations. But what it does is surprisingly sophisticated.
Just once, try only a few drops
If you do not particularly like koregusu, I would like you to try it one more time — but with only a few drops.
It does not have to be Okinawa soba. Try it with miso soup or chicken soup.
First, take a sip without anything added. Then add just two or three drops of koregusu.
This time, instead of focusing only on the heat, pay attention to the steam. Notice the aroma as you swallow and what comes back through your nose afterward.
And if your reaction is still, “No, I really don’t like this,” that is perfectly fine. Some people simply do not enjoy the aroma of awamori. Others do not enjoy spicy food.
But if you find yourself thinking, “Oh, this actually does something quite interesting inside the dish,” I would be happy.
You really do not need much koregusu. A few drops are enough. If it is not enough, you can always add another drop later.
Just shima tōgarashi and awamori
At its most basic, koregusu is simply shima tōgarashi steeped in awamori. That is all.
No special equipment. No complicated processing. Chilies grown on the islands and a spirit that has been made here for generations, put together in the same bottle.
Yet that simple mixture extracts heat that barely dissolves in water, holds onto multiple aromas, disperses easily once added to food, releases more aroma when warmed, and carries the chili heat through the dish and into your mouth.
Of course, some people dislike the aroma of awamori. Too much koregusu can destroy the balance of a dish. And some bottles that have been sitting around for too long simply do not taste very good.
It is not a flawless condiment. If anything, it is slightly difficult to handle. But that is part of why I like it.
I do not think the people who first made koregusu were thinking in terms of the scientific mechanisms I have described here. But sometimes, when we take something that has survived through everyday cooking and look at it later through the language of science, we find ourselves thinking: how remarkably well this works.
Koregusu is not simply spicy liquid. Nor is it merely a condiment that smells like awamori. But neither is it something that makes every dish better when you pour plenty of it on.
A few drops are enough. Those few drops move the flavor of a dish — just slightly. I like that smallness of its effect.
The next time you eat Okinawa soba, taste the broth first. Then add two or three drops. And instead of paying attention only to the heat, notice what rises afterward.

Yes. Koregusu is made by steeping shima tōgarashi in awamori, so even a small serving still contains alcohol.
Some of that alcohol may evaporate when it is added to hot food, but it does not disappear completely. Keep that in mind if you need to avoid alcohol.
In general, an awamori with a reasonably high alcohol content is likely to work well, both for extracting compounds from the chilies and for preservation.
But remember that awamori has aromas of its own. Some are more aromatic, some have stronger grain-like notes, and aged examples can have their own distinctive character. Changing the awamori can therefore change the character of the finished koregusu.
Koregusu is not flavored by shima tōgarashi alone. The awamori is part of the flavor too. Making several versions with different awamori could be an interesting experiment.
The basic form of koregusu is simply shima tōgarashi steeped in awamori. But there are versions that use additional ingredients to create different aromas and flavors.
One I particularly like is the koregusu made with Matsufuji awamori from Sakiyama Shuzosho. Along with awamori and shima tōgarashi, it includes moromi vinegar and yomogi, or Japanese mugwort. The result has not only heat, but also a slightly green, complex aroma and additional savory depth. (Sadly, we do not carry it at our shop.)
And when you think about it, awamori is not merely a liquid for extracting heat from chilies. It can take up a variety of aromatic compounds and carry them into food. Seen that way, adding ingredients such as yomogi, herbs or spices while keeping shima tōgarashi at the center seems like another interesting way to explore koregusu.
The traditional basic form is extremely simple. But once you start thinking about what kinds of aromas you can use awamori to carry into a dish, koregusu begins to feel like a surprisingly flexible condiment.
