Most people reach for wine when there is cheese on the table. We do too — we look at the wine shelf first when a new cheese arrives.
But at our shop in Yomitan, we have come to think that cheese and sake belong together more often than people expect. Not as a substitute for wine, and not as a novelty.
This isn’t an argument against wine. A light white can sit beautifully alongside a bloomy-rind cheese, and an aged hard cheese and a red wine can work very well.
What is different is how a junmai sake — sake brewed from nothing but rice, water, koji and yeast, with no added distilled alcohol — settles against a salty, well-aged cheese. The flavour of the cheese doesn’t stop at the cheese. It carries forward into the sake instead of leaving salt behind on your palate.
The effect is clearest when the cheese is aged and the sake is warmed.
So why does it happen? Looking into it, we found something more interesting than the usual answer of “they’re both fermented.”
The short answer
There are three reasons we keep coming back to.
- In both cheese and sake, flavour is built by breaking proteins down.
- The savouriness and acidity of sake are able to receive the salt and depth of an aged cheese.
- Sake can be served anywhere from chilled to hot, so you can tune the pairing by temperature alone.
You will often read that cheese and sake work because “both are fermented, so you get umami synergy.” That explanation is a little careless, and we’ll come back to why.
What we actually taste is not a dramatic amplification of savouriness. It is the cheese handing its flavour to the sake, and the sake carrying it on. In this article we’ll call that continuity of umami.
What they have in common is a history of breaking down
Cheese and sake share almost nothing on the surface. One is made from milk, the other from rice.
But the way flavour is built in each has one large thing in common: in both, the proteins in the raw material are taken apart, and flavour forms as that happens.
As cheese ripens, milk proteins are gradually broken down by coagulating enzymes, lactic acid bacteria and moulds. That produces peptides and free amino acids, which feed not only savouriness but aroma, bitterness, texture and length.
Longer ageing does not automatically mean more savouriness — it isn’t that simple. Still, protein breakdown is the central reaction that shapes how an aged cheese tastes.
In sake, enzymes produced by koji — the mould Aspergillus oryzae, cultivated on steamed rice — break down the proteins in the rice. Some of the resulting amino acids and short peptides carry into the finished sake and contribute to its breadth and weight. Japanese brewers even track a routine measurement called amino-sando, the “amino acid level,” which tells you roughly how much of that character a sake carries.
The point is not that cheese and sake contain the same compounds in the same amounts. It is that in both, proteins are unpicked, and flavour grows more complex as that happens.
That shared history is, we think, the foundation underneath the pairing.
Eat a salty, savoury cheese with a sake that is too light, and the cheese is left stranded in your mouth. Give the sake its own savouriness and acidity, and it can pick the cheese up and carry it onward. That is where the continuity comes from.
Why “umami synergy” isn’t quite the right explanation
The synergy people usually mean is a real and well-documented thing: combine an amino-acid-type savoury compound such as glutamate with a nucleotide-type one such as inosinate or guanylate, and the savouriness registers far more strongly than either does alone.
Japanese stock is built on exactly this. Kombu seaweed with dried bonito flakes. Kombu with dried shiitake.
Research describes it at the receptor level: once glutamate binds to the umami receptor, the nucleotide stabilises that binding, so the taste reads as stronger and lasts longer. It isn’t simple addition. One opens the door; the other bolts it from the outside.
Does the same relationship hold between cheese and sake? Honestly, we don’t know. As far as we could find, no study has actually paired the two, measured their glutamate and nucleotide content, and tested the savouriness people perceive.
But whether it qualifies as “synergy” in the technical sense and whether the two taste good together are separate questions.
What you get with cheese and sake is not the sudden multiplication you get from kombu and bonito. It is the savouriness of the cheese passing into the savouriness of the sake, with no gap in between.
The heart of this pairing is not making umami bigger. It is not letting it break off.
They don’t work because they are both fermented. They work because the handover succeeds.
Once you see it that way, the way you choose a sake changes too. You don’t simply want the most full-flavoured bottle on the shelf. You want one with enough savouriness, acidity and length to receive what the cheese hands over and take it somewhere.
A pinch of something else may change the equation
If cheese and sake alone don’t clearly produce classical synergy — what happens if you add the nucleotide side back in?
In cooking this is nothing new. Cheese has always been combined with meat, seafood, mushrooms and stock. Layering inosinate or guanylate over the glutamate in cheese is ordinary practice.
The catch is that cooking a dish loses the ease of simply putting cheese and sake next to each other. So: a small pinch of katsuobushi, dried bonito shaved into flakes.
Add the inosinate in bonito flakes to the free glutamate in cheese and, in principle, you have the conditions for synergy. A little powdered dried shiitake, or a spoonful of its soaking liquid, brings guanylate instead.
A pairing that was slightly short with two elements may connect with a third.
Rather than opening bottle after bottle, think about what small thing to put between them. It is an easy and genuinely interesting experiment.
Blue cheese may be changing how the sake tastes
Blue cheese is the pairing we are most confident about — and not simply because a strong cheese wants a strong drink.
There is a sensation known as kokumi. It is a slippery word. It is not the everyday sense of “rich” or “fatty” or “strongly flavoured.” Compounds associated with kokumi — γ-glutamyl peptides among them — reportedly have little taste of their own, but make the sweetness, saltiness and savouriness around them read as stronger, thicker and longer-lasting.
Here is the part we find interesting. In an analysis of a range of cheeses, the highest concentration of γ-glutamyl peptides was found in a blue-veined cheese. Penicillium roqueforti — the mould that makes a blue cheese blue — has itself been shown to produce these peptides.
If a blue cheese makes the flavours around it register more strongly, then it is doing that to the sake as well — to the good parts and to the awkward parts alike.
Which suggests blue cheese doesn’t need a strong sake so much as a sake that doesn’t fall apart when it is put under a magnifying glass.
A sake whose savouriness, acidity and aged aromas read as one thing rather than three. One that fills out when warmed, instead of throwing its aroma forward and leaving the palate behind.
We had already learned by trial that an aged junmai like Umetsu no Kimoto works remarkably well with blue cheese. This gives us a useful line of reasoning for why.
And if the cheese can change how the sake appears, it helps enormously that the sake can change shape too.
Which brings us to temperature.
Sake can change shape to meet the cheese
Wine has serving temperatures, and aroma and flavour shift with them.
But a single bottle of sake can be served chilled, at room temperature, gently warm, warm, or hot — a genuinely wide range. For cheese, that is a large advantage. You can adjust the pairing without changing the bottle.
Cold sake tightens up. Its edges sharpen and you notice acidity and dryness more. With some cheeses that firmness sits apart from the fat and salt, and the two stay side by side in your mouth without ever becoming one thing.
Warm it a little and the aroma and savouriness open, and the sake lands more softly. The fat, salt and aged savouriness of the cheese can move into it.
We should be careful here: warm sake is not physically melting the fat in the cheese. What changes is the overall impression — aroma, sweetness, acidity, savouriness and the sensation of alcohol, all shifting together.
With aged hard cheeses and blues, we generally find that sake at around 40–50°C (105–120°F) connects more naturally than chilled sake does.
Seen this way, warming sake — kanzake — is not simply heating a drink. It is reshaping the sake to move it closer to the cheese.
If the cheese is young and light, keep the sake cooler and let it hold its outline. If the cheese is aged and thick, raise the temperature and let the savouriness open.
A single bottle of sake holds several possible pairings inside it. For cheese, that is its particular strength.
One caution: warmer is not automatically better. Heat can also push forward the aromas in a sake you would rather not notice.

When it doesn’t work, suspect the similar aromas
A common rule of thumb says that things sharing aroma compounds go well together. Sometimes that is exactly right.
But similar aromas are not always on your side.
An aroma that was unremarkable on its own can jump forward when something pointing the same way is placed beside it.
Pair a nigori — a cloudy, unfiltered sake with rice solids left in — with a goat cheese, and the goaty note that you barely registered on its own can come through hard. Put a washed-rind Langres next to sake, and beany, fermented notes can stack up until the smell arrives before the flavour does.
Neither the cheese nor the sake is at fault. Similar aromas simply worked as amplification rather than harmony.
Of course, if that funk is precisely what you came for, this is a very good pairing indeed. We are not going to talk you out of it — and you would be in good company at our shop.
An analysis of recipes from around the world found that North American and Western European cooking tends to combine ingredients that share aroma compounds, while East Asian cooking tends toward the opposite: the more compounds two ingredients share, the less likely they are to appear together.
That analysis was about food, not drink pairings. Still, it is a reasonable warning against treating shared aroma as the only criterion.
In short: look for what connects, but also watch that you are not stacking up the parts you would rather not notice.
So which direction does connect naturally? Our answer is aged cheese with aged sake.
Aged with aged: they tend to speak the same language
Sake held for a long time develops sweet, toasted aromas that a young sake doesn’t have.
Caramel, brown sugar, honey, nuts, soy sauce, dried fruit. How it shows depends on the conditions, but one compound consistently associated with these notes is sotolon. In studies of long-aged sake, sotolon exceeds the concentration at which it can be perceived and contributes substantially to the aged character.
That said, a label reading “aged” does not guarantee the same aroma in every bottle. Ageing time, temperature, the composition of the sake and the vessel all change how it develops. What is reliable is that an aged sake carries a layer of aroma a young one does not.
Cheese does the same thing. As it ripens, the simple sweetness of milk gives way to nuts, earth, meat, mushroom, soy sauce, broth.
Different raw materials, different methods — and yet, further along the road of ageing, they start to use some of the same words.
Aged cheese and aged sake go together not because both happen to be old. It is that ageing has widened each one’s vocabulary of aroma and flavour, and the vocabularies overlap.
One evening we put the same blue cheese next to a light table wine and an aged junmai sake. With the wine, the cheese’s more difficult aromas came forward and covered the good parts. With the aged junmai, the salt, savouriness and aged character of the cheese ran on into the sake, and the finish didn’t break.
That is not a verdict on all wine and all sake. But changing only the drink, and watching the same cheese look that different, stayed with us.
Five cheeses that arrived in July, and where to start
Here is how the above applies to the five cheeses that reached the shop in July 2026. We have not finished testing all of them, so what follows mixes combinations we have confirmed with starting points reasoned from each cheese’s character.
Blue Stilton
England / cow’s milk / blue
Deep savouriness and salt, the clean bite of the blue, and a faint sweetness underneath. Of the five, this is the one we recommend sake for with the most confidence. Pair it with an aged junmai made by the kimoto method — a traditional, labour-intensive way of building the yeast starter that tends to give sake more acidity and depth. Warm it to around 45–50°C (115–120°F) to start; if the sake holds together, go warmer. You are not looking for a sake that overpowers the blue, but one with the savouriness, acidity and aged aroma to take its weight. Umetsu no Kimoto from Umetsu Shuzo in Tottori, in its aged version, is where we would begin.
Pecorino Moliterno
Sardinia, Italy / sheep’s milk / hard
Sheep’s-milk richness with a surprisingly gentle aroma, a soft milky sweetness and aged savouriness. A junmai with both savouriness and acidity, from room temperature to gently warm. Eaten in thin slices on its own, taking the sake up to around 45°C (113°F) helps the sweetness of the sheep’s milk and the savouriness of the sake meet. If you are grating it over pasta or salad, adding bonito flakes or a little shiitake stock to the dish lets you try the three-way version described above.
Roccolino al Tartufo
Italy / cow’s milk / with summer truffle
Mellow, rich cheese carrying the aroma of summer truffle. Here, aroma matters more than intensity. A sake with strong aged or fermented aromatics risks stacking onto the earthiness of the truffle. Start with a quieter junmai with balanced acidity and savouriness, from room temperature to around 40°C (104°F). You want a sake that folds the truffle back into the body of the cheese rather than pushing it forward.
Lingot d’Argental
Near Lyon, France / cow’s milk / bloomy rind
A double-cream bloomy-rind cheese. Milky, fine-textured and smooth; bring it to room temperature and the centre softens and runs. Weigh the sake down too much and the fat and sweetness linger. Rather than a heavily aged sake, try a brisk, acidic junmai or junmai ginjo — made with more highly polished rice, typically lighter and more aromatic — at room temperature or barely warmed. Sparkling sake is also a good candidate. The idea is to give the fat an outline with acidity and lightness, rather than matching weight with weight.
Mimolette Bio Jeune
Normandy, France / organic cow’s milk / hard
A young Mimolette at six months. Light and fruity at first, with firm savouriness once you chew. It hasn’t the concentration of a long-aged Mimolette, but there is a depth to it that reminds us of miso. To play up the youth, take a brisk junmai at room temperature or slightly cool. To follow the miso-like depth instead, choose a junmai without heavy aged aromatics and serve it around 40°C (104°F). This is a cheese where you can decide which side you want and set the sake and the temperature accordingly.
At home: change the temperature before you change the bottle
You don’t need a row of different sakes. Start with one bottle and change only its temperature.
Take the cheese out of the fridge and let it sit. It doesn’t need to come to room temperature all the way through — begin once the surface has softened and the aroma has started to open.
Try the sake at room temperature first, then at around 40°C (104°F). For an aged hard cheese or a blue, finish by taking it to around 50°C (120°F). Holding the bottle constant makes it much easier to tell whether what you need is a different sake or simply a more open one.
Eat the cheeses from mild to strong: bloomy rind, young hard, aged hard, washed rind, blue.
When something doesn’t work, change the temperature before you start adding other things to cover it up. If that fails, change to a sake whose aroma points in a different direction.
That sequence alone will clear up most of the confusion.
To warm sake at home, all you need is a chirori — a slim metal carafe — lowered into a pan of hot water. No special equipment beyond that.
Rather than making the flavour bigger, carry it further
Cheese and sake do not work together simply because both are fermented.
In the ripening of cheese and the brewing of sake, proteins are broken down, and amino acids and peptides build the weight of the flavour. The two do not so much share the same compounds as share a similar history of how their flavour was made. That, we think, is why sake receives cheese so readily.
How much classical umami synergy is actually occurring between them, we can’t say. But amplification was never what we were after. What we want is for the flavour of the cheese not to stop — to be handed to the sake and carried on.
With blue cheese, compounds associated with kokumi may be making not only the cheese but the sake beside it read more strongly.
With aged cheese and aged junmai, the vocabularies that ageing gave each of them overlap. And sake, uniquely, can change its own shape by temperature to meet the cheese where it is.
That is why we suggest sake with cheese at Nagahama88. Not as a replacement for wine — but because it lets you taste the cheese for longer, and further in.
With an aged cheese especially: a junmai with savouriness and acidity, served warm.

FAQ
How do I choose a sake for cheese from the label?
Look for junmai, kimoto, yamahai or an indication of ageing. These point toward more savouriness and acidity. That said, the label alone doesn’t decide the pairing — to begin with, choose a junmai with real flavour to it, one with noticeable acidity, or one described as suited to warming.
What temperature should I start at?
Around 40°C (104°F). For aged hard cheeses and blues, going up to 45–50°C (115–120°F) often helps the savouriness connect. For bloomy-rind and younger cheeses, staying between room temperature and about 40°C preserves their more delicate aromas.
Does warming the sake help with the fat in cheese?
We find that warm sake and cheese fat are less likely to sit separately on the palate than cold sake and cheese fat. That is down to how aroma, savouriness, acidity, sweetness and texture all shift with temperature, rather than the sake doing anything to the fat itself.
Does every cheese work with sake?
No. When the fermented, lactic or animal aromas of the sake and the cheese point in the same direction, the notes you would rather not notice can come forward. If that happens, change the temperature first; if it still doesn’t work, move to a sake whose aroma points elsewhere.
