If you have picked up a bottle of sake in Japan and found the label impossible to decode, the problem is not you. There really is a lot on it, and much of that information describes how the sake was made rather than how it will taste.
You do not need to memorise every term before choosing a bottle. For a useful introduction to sake, start with three things:
- whether it is junmai
- a few words that describe how it was made
- the temperature at which you serve it
The polishing ratio and grade are real information, but they are less important than many guides make them sound. We would rather you left with one bottle you can enjoy at three temperatures than with a long vocabulary list.
Sake is brewed, not distilled
At its core, sake is brewed with rice, water, koji and yeast. It is not distilled, and most bottles sit at around 15% alcohol.
Rice contains starch, but yeast cannot ferment starch directly. This is where koji does the heavy lifting.
Koji is steamed rice cultivated with the mold Aspergillus oryzae. Its enzymes break the rice starch down into sugar, which the yeast can then ferment into alcohol.
In sake brewing, this conversion and fermentation happen together in the same tank. This allows sake to reach a relatively high alcohol level for a brewed drink. Some sake reaches more than 20% before water is added to bring it closer to the familiar 15%.
Koji also breaks down some of the proteins in the rice. As a result, sake generally contains more amino acids and peptides than wine or beer. This is one reason it works so naturally with savory food.
In Okinawa, sake and awamori are not the same drink
This is worth clearing up early because you will see far more awamori than sake in Okinawa.
Awamori is distilled. It is made using black koji and is legally a type of shochu. Sake is brewed rather than distilled and is normally made with yellow koji.
They are different drinks with different characters and different uses at the table. This article is about sake.
The most useful word on the label: junmai
Junmai means that no distilled alcohol has been added. It is made from rice, rice koji and water, with yeast carrying out the fermentation.
Not all added alcohol is used to make cheap sake. In ginjo, daiginjo and honjozo, a limited amount may be added to lift the aroma and create a lighter, cleaner finish.
Still, junmai is a useful starting point for beginners, particularly when you want sake to drink with food. It often leads you towards a fuller texture and a more savory expression of the rice.
It is not a guarantee of quality, and it does not describe one single flavor. Junmai can be light or rich, dry or gently sweet, fresh or aged. But it narrows the field in a useful way.
You do not need to memorize all eight grades
Japanese law defines eight special categories of sake. They are divided into two broad families: those made without added distilled alcohol and those made with a limited amount.
You will see names such as junmai, honjozo, ginjo and daiginjo. These categories tell you about ingredients, polishing and brewing methods. They do not form a simple ladder from bad to good.
The number most often discussed is the seimai buai, or polishing ratio. It shows how much of the rice grain remains after polishing.
A polishing ratio of 60% means that 40% of the grain has been removed. A lower number therefore means that more rice was polished away.
Highly polished sake is often lighter, more delicate and more aromatic. Less polished sake may retain more grain character, savouriness and structure. Neither is automatically better.
A junmai polished to 70% may work beautifully with dinner, while a highly aromatic daiginjo may be better enjoyed on its own. The right choice depends on the bottle, the food and your own taste.
Label words that tell you more about the drink
Beyond junmai and the grade name, a few terms can give you a clearer idea of what is in the bottle.
Nama or namazake (生 or 生酒)
Unpasteurised sake. It is often fresh, lively and expressive, and it must be kept refrigerated.
Genshu(原酒)
Sake that has not been diluted with water after brewing. It is usually stronger and more concentrated, often above 17% alcohol.
Genshu can be served as it is, over ice or occasionally with a small amount of water.
Nigori (濁り)
Sake passed through a coarse filter so that some rice solids remain. It looks cloudy and often feels creamy or softly sweet, although not every nigori is a sweet drink.
Kimoto and yamahai (生酛 and 山廃)
Traditional methods of preparing the yeast starter.
Instead of adding prepared lactic acid, the brewer allows naturally occurring lactic acid bacteria to establish the acidic environment needed for fermentation. These methods often produce sake with more structure, acidity and savoury depth.
Yamahai follows the same basic principle as kimoto but omits the traditional, labor-intensive mashing process.
Jukusei shu or Koshu (熟成酒 or 古酒)
Sake aged intentionally, often for several years. It may develop an amber color and aromas resembling caramel, dried fruit, nuts or spices.
These are tendencies, not rules. A label tells you how the sake was made, but the glass still has the final word.
Temperature is the dial you control
Sake can be served across a much wider temperature range than most wine. It may be enjoyed chilled at around 5–15°C, at room temperature or warmed to 40–55°C and sometimes up to 70°C and above.
The useful point is not memorizing the Japanese name for every temperature. It is understanding that the same bottle can behave like several different drinks.
Cold often tightens the aroma and makes the finish feel sharper and drier. Warmth can open the aroma, broaden the savory flavors and make the texture feel softer.
Warming sake is not only for winter, and it is not a way to rescue cheap sake. It is one way of revealing a bottle.
Warmer is not automatically better. Heat lifts everything, including aromas you may not want to emphasise. Some sake becomes generous and rounded at 45°C; another may lose the freshness that made it enjoyable.
The only reliable way to know is to taste it.
Sake at the table
Sake is an unusually flexible drink with food.
It has no tannin, its acidity is generally lower than wine’s, and its amino-acid-rich savouriness allows it to sit beside a dish rather than dominate it.
It works easily with grilled fish, simmered dishes, fried food, pickles, miso, soy sauce and many Okinawan dishes. It can also work remarkably well with aged cheese, particularly when the sake has enough acidity and depth.
Pairings often go wrong because of aroma rather than richness. A strongly fermented sake and a strongly fermented food may bring similar earthy, yeasty or lactic aromas forward at the same time.
When that happens, try changing the serving temperature before changing the bottle. Cooling may tighten an overly expressive sake, while warming may soften another and bring its savoury side forward.
How to start: one bottle, three temperatures
You do not need several bottles to begin understanding sake. You need one bottle and a little curiosity.
Choose a junmai with some flavour and acidity. A bottle described as suitable for warming is ideal.
First, pour a small glass chilled or at room temperature. Notice the aroma, texture, sweetness and finish.
Next, warm some of the same sake to around 40°C and taste it beside the first glass.
Finally, especially if you are eating something salty, rich or aged, try another serving at around 50°C.
You may prefer one temperature clearly. You may also find that each version suits a different part of the meal. Either result teaches you more than reading the polishing ratio alone.
How to warm sake at home
The easiest controlled method is a water bath.
Pour the sake into a small carafe or chirori, then stand it in a pan of hot water. Remove it when it reaches the temperature you want.
A microwave also works. Heat the sake in short bursts and stir between each one so that the temperature stays as even as possible.
There is no need for perfect precision. Around 40°C should feel gently warm; around 50°C will feel clearly hot but should still be comfortable to drink.
How to store sake
Namazake must be refrigerated before and after opening.
Ginjo and daiginjo are also best kept cold if you want to protect their delicate aromas. Most pasteurised sake can be stored upright in a cool, dark place.
After opening, refrigeration is the safest general rule, particularly for fresh, light and aromatic styles. Many bottles remain enjoyable for a week or two.
Fuller junmai sake, especially aged sake and styles made with ageing in mind, does not always need to be refrigerated. It can be kept upright in a cool, dark place after opening, away from heat and large changes in temperature.
With these sakes, gradual change is not necessarily a loss of quality. The flavours may become rounder, deeper and more integrated over time. Even an unaged junmai that is suitable for ageing can continue to develop naturally after opening, and following that change can be part of the enjoyment.
Age alone does not mean that sake is spoiled. Fresh, delicate aromas are usually the first things to fade, while richer and more savory styles may evolve more slowly. Storage therefore depends not only on whether the bottle has been opened, but also on the style of sake and how you want it to develop.

Most people who ask us about sake are not asking about legal categories or polishing ratios. Their question is usually much simpler:
“I don’t know where to start.”
So we normally ask what they are eating.
We then choose a bottle with enough savouriness and acidity to work at the table and suggest trying it cool first, then warming the second half.

Rather than learning every word, turn the dial
Sake is brewed from rice with the help of koji and yeast. Most bottles sit at around 15% alcohol, but within that simple outline is an enormous range of flavor.
The grade and polishing ratio tell you something about how the sake was made. They do not tell you whether you will enjoy it or whether it will suit tonight’s dinner.
Junmai is a useful place to begin. Words such as kimoto, yamahai, nama, genshu and koshu give you a little more direction.
Then comes the part no category can decide for you.
Pour one glass cool. Warm another. Taste them beside each other.
One bottle served at two temperatures may teach you more about sake than a shelf of bottles served only cold.
FAQ
Is it wrong to call it “sake” in Japan?
No. In Japanese, sake can mean alcoholic drinks in general, while nihonshu refers specifically to Japanese rice wine. Seishu is the legal term commonly seen on labels.
Ordering “sake” in a bar will normally be understood, but nihonshu removes any ambiguity.
Does all sake need to be refrigerated?
No.
Namazake must be refrigerated. Ginjo and daiginjo are best kept cold to preserve their aromas. Most pasteurised sake can be stored unopened in a cool, dark place.
Is sake gluten-free?
Standard sake is made from rice rather than wheat or barley and is generally considered gluten-free. It is also normally made without added sulfites.
For a serious allergy or sensitivity, check the specific bottle with the brewery or importer, particularly if it is a flavored or mixed product.
